PRODUCER

Unico Zelo is a small winery, run by the youthful Brendan and Laura Carter. Still only in their twenties, this dynamic couple have been making wine under the Unico Zelo label for the last seven years, taking their inspiration from their intense passion for their native land. The wines are crafted from varieties that require minimal intervention, both in the vineyard and the winery. The in-depth study of vineyard sites in South Australia has led them to focus on those Italian varieties which flourish in
the inland, continental climate of the Clare Valley and Riverland. These delicious and unique wines combine sustainability and drinkability to great effect.

VINEYARDS

The Bianco d’Alessano comes from a fifteen year-old double cordon trained, unirrigated vineyard and the Muscat comes from seventy-three year-old unirrigated bushvines, both planted on light clay and limestone soils in the Riverland.

VINIFICATION

The grapes were fermented for two weeks on their skins in stainless steel, without temperature control and using only wild yeast. Following this the wine was matured for twelve months in a 3,000 litre oak foudre, before being bottled unfined and unfiltered.

TASTING NOTES

Crafting a pinpoint precise, squeaky clean wine is one of the most boring things we could possibly think of. We prefer embracing your inner creative, and searching for more radical experiences. This has become one of our most cult-followed wines since we began. It’s not exactly white wine, nor red - many call it Amber wine...but we just call it Esoterico. We make no additions of any kind - save for sulphur when we bottle the wine. There is no fining or filtration involved, with the wine allowed to clarify by gravity alone - resulting in a slight haze and sediment. This is one of the most enjoyable wines to craft, as there was no preconceived idea of what it must taste like - the chief driver is pure drinkability - a ‘scrumptious’ quality, mouthwatering acidity and ‘say hello!’ tannins. It’s a Bohemian at heart.
